* Exported from MasterCook * Cheese Cake, low fat Recipe By :David Donaghue Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups graham cracker crumbs, low fat 6 tablespoons oil-substitute 1 1/2 pounds cream cheese, low fat 1 cup sugar 2 teaspoons vanilla extract 6 egg whites 1 pint sour cream, fat free 2 tablespoons sugar 1/2 teaspoon vanilla extract Bring all ingredients to room temperature. Preheat oven to 350. Combine grahm crackers and oil substitute to make crust. Press crust mixture into bottom of 9" springform pan. Blend cream cheese, 1 cup sugar, vanilla and egg whites to make filling and pour over crust. Bake for 35 minutes or until edges are lightly browned and pulling away from the pan. The middle will be SLIGHTLY unset. Turn off oven and let cake cool in oven for about an hour. When cool, remove from oven, and heat oven to 425. Mix sour cream and two tablespoons sugar and spread on top. Bake for not more than 5 minutes.
