* Exported from MasterCook * Grandma Brown's Rice Pudding Recipe By :Grandma Brown Serving Size : 12 Preparation Time :1:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup long-grain white rice -- raw 4 cups milk, 1% lowfat 2 tablespoons margarine from corn oil, unsalted 1 cup sugar 4 eggs 1/4 teaspoon cinnamon 1 dash mace 1 lemon peel -- grated Soak rice in 2 cups milk for 2 hours. Add remaining milk and cook over low heat 20-30 minutes until rice is tender. Set aside to cool. Work margarine until soft. Cream in sugar. Beat in eggs. Add rice mixture and flavorings. Preheat oven to 350oF. Pour pudding into 3 quart casserole.
