* Exported from MasterCook * Jeremy's Favorite Cheese Cake Recipe By : Serving Size : 12 Preparation Time :1:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Crust 1 1/2 cups graham cracker crumbs 6 tablespoons butter -- melted Filling 1 1/2 pounds cream cheese 1 cup sugar 2 teaspoons vanilla extract 4 egg Topping 1 pint sour cream 2 tablespoons sugar 1/2 teaspoon vanilla extract Strawberry Topping 3/4 cup sugar 3/4 cup strawberry jam 1 1/2 teaspoons strawberry extract 1 teaspoon vanilla extract Bring all ingredients to room temperature. Preheat oven to 350oF. Press crust mixture into bottom of 9" springform pan. Blend filling ingredients and pour over crust. Bake for 35 minutes or until edges are lightly browned and pulling away from the pan. The middle will be SLIGHTLY unset. Turn off oven and let cake cool in oven for about an hour. When cool, remove from oven, and if using sour cream topping, heat oven to 425oF. Mix sour cream topping ingredients and spread on top. Bake for not more than 5 minutes. Chill for at least four hours.
