Mix crust ingredients and press onto bottom of a 9" springform pan. Bake for 10 minutes to set. (Coconut cookie crumbs and brown sugar may be substituted.) Filling Method #1: Beat cream cheese and sugar in mixer until smooth and fluffy. Add eggs, lime juice and peel (two limes) and continue to beat until well mixed. Filling Method #2: Put all ingredients in a food processor bowl and process until smooth, scraping down bowl as needed. Pour filling over crust and bake 40 minutes until edges are beginning to brown and middle is not quite set. Whisk together the topping ingredients and pour gently on cake. Continue baking another 10 minutes. Cool at least 4 hours until very cold.
