* Exported from MasterCook * Pumpkin Flan Recipe By :Linda Donaghue Serving Size : 8 Preparation Time :1:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup sugar -- carmelized 4 eggs -- lightly beaten 1/3 cup sugar 1/2 teaspoon salt 1/2 teaspoon cinnamon 1/8 teaspoon ginger 1 cup pumpkin -- canned 1 3/4 cups half and half 1/4 cup orange juice Preheat oven to 350oF. Put 1/2 cup sugar in medium-size heavy skillet. Cook over medium heat stirring constantly until clear and caramel colored syrup forms. Immediately pour into baking dish. Combine remaining ingredients in the order given, beating only to mix smoothly. Pour into baking dish and place in shallow pan filled with hot water. Bake for 45-60 minutes until knife inserted in center comes out clean. Chill overnight. A half-hour before serving, get out of refrigerator and allow to sit.
