* Exported from MasterCook * Tomato Lasagne Rollups Recipe By :Sorrento Serving Size : 5 Preparation Time :1:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 ounces lasagna noodles -- cooked Sauce 2 tablespoons olive oil 1/4 cup chopped onions 1 clove garlic -- minced 29 ounces stewed tomatoes -- Italian seasoning fl 2/3 cup tomato sauce Filling 15 ounces ricotta cheese, part skim milk 10 ounces frozen spinach -- thawed and drained 1/2 cup mozzarella cheese -- shredded 1 egg -- beaten 2 tablespoons parmesan cheese -- grated 1/2 teaspoon salt 1/2 teaspoon black pepper 1/2 pound ground turkey -- optional Topping 1/2 cup mozzarella cheese -- shredded Cook noodles (10 noodles) according to package directions. Drain and lay flat on aluminum foil or a cookie sheet sprayed with Pam or oiled. In skillet heat oil. Fry onion and meat until cooked. Add tomato sauce, stewed tomatoes, garlic Simmer, stirring to break up tomatoes. Season if needed, add a pinch of sugar if needed. Preheat oven and allow sauce to continue simmering. Combine filling ingredients. Spread 1/3 cup of mixture on each noodle. Roll up. Place about 1/2 of sauce in bottom of 9 x 13 pan. Place rolled up noodles on top. Spoon on balance of sauce. Cover and bake for about 35 minutes until bubbly. Uncover top with mozzarella cheese and bake until cheese is browned.
